That's where I spent my day. It felt good. But before I get into that, here's an update. I went to the doctor again today, primarily for my "well woman" exam. She discussed the results of last week's blood tests and basically I'm normal. That is good news, but it does not explain the issue with my fingers. And now I can't blame an under-performing thyroid for my inability to lose more weight. The plan going forward is to keep a log of when the finger issue happens, document what I was doing, where, the temperature, and so on, and if possible to take a picture of my hands as it is happening. Once I have that information I'll go back to see her and then we can decide whether to see a rhumetologist, a vascular specialist, or an immunologist.
So back to the good stuff. I started out making soup. It was a simple soup in the crock pot. I didn't follow any recipe. I think I should have used a little less tomato puree, but I liked the thick broth. I had expected it to be a little waterier. Anyway, I put in red kidney beans, chickpeas, cannellini beans, potatoes, frozen mixed veggies (green beans, corn, carrots), Italian seasoning, tomato puree, and vegetable broth. I think it turned out very well and it was a great dinner.
The other thing I did today was bake. I had the urge for a few days, so today was the day. I had picked up a few things at the store yesterday. My Pensacola running friend Jen A had mentioned this recipe to me and it sounded so perfect for a cold rainy fall day. The result?
PERFECT!
Four dozen soft, moist, chewy pumpkin chocolate chip cookies. Mmmmmmmm!
In other news, I booked my airfare to go see my sister, her husband, and my niece in Portland next month. I am really excited. One of the things we are going to do together is take a cooking class. It is how to make cheese and milk vegan style. I am really excited about it!
Next on my list? Pre-ordering the iPhone 4s. Results tomorrow...
